Doggy Dessert Chef’s Parmesan Mini Meatballs

According to Gus, he has a real beef (pun intended) with how this post ends.  His complaint is legitimate…you’ll see why at the end of the post.

We’re huge fans of Doggy Dessert Chef and when we spotted the Parmesan Mini Meatballs recipe on their blog, we knew we had to make it.  The ingredient list was limited (we had everything on hand) and the directions were simple.  The whole process, including clean-up, took less than an hour.  M would argue that at least 20 minutes was devoted to my obsessive photo snapping.  I won’t disagree with him, this time. 😉

There was no way Gus could eat all those meatballs (wink, wink), so we did him a favor and made ourselves a scrumptious lunch.  It was difficult, but we took one for the team. 😉

Doggy Dessert Chef’s Parmesan Mini Meatballs

Adapted from Doggy Dessert Chef
  • 3/4 lb Ground Beef
  • 3/4 cup Parmesan Cheese
  • 1 tablespoon Dried Parsley
  • 1 Egg
  1. Preheat oven to 375 degrees
  2. Mix all ingredients in a large bowl
  3. Shape mixture into 1/2 inch meatballs
  4. Place meatballs on a foil lined cookie sheet (lightly misted with olive oil)
  5. Bake for 7-10 minutes or until internal temperature reaches 160 degrees

We hope you’re all having a great weekend.  San Antonio received a “dusting” of snow overnight on Thursday and the entire city shut down yesterday.  It literally looked like someone sprinkled a bag of powdered sugar on the ground.  We attempted to make snow angels, but ended up with only grass stains instead.  Bummer.  We’ll be sharing photos of San Antonio’s (epic) Arctic Blast next week.  🙂
